Yield: 4–5 waffles (depending on your waffle maker)

Ingredients
120g (1 cup) all-purpose flour
1 tbsp sugar
1 tsp baking powder
 
½ tsp baking soda Pinch of salt
1 large egg
240g (1 cup) sourdough discard 180g (¾ cup) milk (any kind)
56g (½ stick) salted butter, melted and slightly cooled
1 tsp Andrea’s Bakehouse Vanilla Extract 

Instructions
1.    Preheat your waffle iron.
2.    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3.    In another bowl, whisk together the egg, sourdough discard, milk, melted butter, and vanilla extract if using.
4.    Pour the wet mixture into the dry ingredients and stir just until combined. The batter will be thick.
5.    Lightly grease the waffle iron and cook according to your machine’s instructions until golden and crisp.
6.    Serve warm with butter, maple syrup, or fruit.
