Brown Sugar Cornbread

Ingredients
1 cup (120g) yellow cornmeal 1 cup (125g) all-purpose flour
¼ cup (50g) Andrea’s Bakehouse Vanilla Brown Sugar (insert hyperlink)
 
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
1 cup (240ml) buttermilk
2 large eggs
¼ stick butter, melted (plus extra for greasing pan)
1 tsp vanilla extract (optional, enhances the vanilla notes)

Instructions Preheat the oven:
Preheat oven to 400°F (200°C). Grease an 8-inch square baking pan or a 9-inch round skillet with butter.

Mix dry ingredients:
In a large bowl, whisk together cornmeal, flour, Vanilla Brown Sugar, baking powder, baking soda, and salt.

Combine wet ingredients:
In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract if using.

Mix batter:
Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix; a few small lumps are fine.

Bake:
Pour batter into a prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
